Almond Crusted Chicken Tenders
In yet ANOTHER attempt to continue on my mission to eating better, tonight's chicken was definitely a home run. It was even toddler approved by Teigan.
It was super simple to make and like I already said it was DELICIOUS!
Preheat your oven to 400 degrees
Lightly spray your pan with cooking spray
Chop(use food processor) 1 cup of raw whole almonds
Lightly coat chicken tenders with EVOO(extra virgin olive oil)
Finally coat the tenders with the finely chopped almonds
Bake for 25 minutes or until golden brown
We will definitely be having these again! Planning to play around with some seasoning or marinade next time!
Give these a try I promise you won't be disappointed!

Life happens!
I've been MIA lately! Phew! This, that, and the other going on! I've been working on meal prep tonight more like snack prep really. I will post pictures hopefully tomorrow. I'm still alive and kick in' been lazy really about posting! Crossing my fingers I can get back into a groove.

Better odds of..........
I'm sure your all dreaming of what you would do should you win the Powerball or even a portion of it. Quite honestly it would be both a curse and a blessing!
We had some scratch off tickets from Christmas we won a whopping $15.00 on. So I pitched in a buck and said gimme some Quick Picks! The odds of winning that mind boggling jackpot of $1.5 billion are 1 in 292.2 million. But somebody's gotta win right!?
I figured for fun I'd share a few things you'd have better odds of happening than having that winning that Powerball ticket!
1. Getting struck by lightening, 1 in 164,968.
2. 1 in 3 million chance of seeing a UFO.
3. You'd have a 1 in 10 million chance of being elected president.
4. The odds of having quintuplets are 1 in 92,720.
5. Being dealt a total flush in a poker game odds are 1 in 649,740.
I'll be waiting for the drawing IF I can stay up that late! I'll have my fingers crossed just like every other ticket holder. But, if you don't hear from me for a while, I might be passed out on my livingroom floor in sheer panic because my life has just changed! LOL!

Two peas in a pod
Boomer and Teigan are inseparable! Chances are if one is getting into trouble the other isn't far away! This was this morning within an hour time span. I SERIOUSLY have two toddlers on my hands! There's never a dull moment with these two!

What's your chances for success?
I'm slowly becoming one of those self proclaimed health nuts. Is it hard? ABSOLUTELY! I'm certainly not perfect, no one is, even your hard core fitness buff is bound to cave on a cookies at some point in time. Don't beat yourself up over it!
Focus on your goal. Make it REASONABLE! None of this I need to lose 10lbs in a week crap. Be SMART about it. The buddy system is always a good idea. Grab a pal and use them for accountability! Make yourself a reward chart(ex: lose 5lbs new shirt, 10lbs a pedicure, 15lbs get your hair done).
On certain days I have no motivation so I'd consider myself at 0%. The days I have Crossfit I'm at 100%! Buuuut, then there are the 50% half ass it days. But the way I look at it I'm still accomplishing more than the person sitting on the couch!
I had crossfit this morning and man it was a KILLER workout.....I'm currently half assing the rest of my day curled up under the Minion fleece(which is slowly becoming mine) and having to share the chair with Boomer(the only reason she's snugly is because of the sunny patch).<\p>
Hopefully you'll find your success rate rising daily, weekly, or monthly!

Getting a grip on the 21 day fix
Yesterday we went shopping and prepared for the 21 day fix. It's going to take some time to get a grip on the shopping list.....I'm slightly picky so it's going to be some taste testing!
Don't mind the not so "good for you foods". Teigans little she needs some junk food RIGHT!?
Yesterday I was able to figure up my calorie intake before little miss was up!
Here's what mine looks like:

I get to consume the numbers of containers in the very first column. It may not seem like a whole lot but it really is!
The above picture is the breakdown of what the colored containers are for and how much they hold! This system seems a little overwhelming at first. It's the shopping that trips me up! Within another week or so I'm sure I'll have a system down and will actually have meal plans! I also need to work on a good way to keep track of my containers used.
I'm also trying to stick to the 6 small meals a day. My breakdown according to my current schedule is:
7 am- Breakfast
3 pm- Snack
10 am- Snack
5 pm- Supper
12 pm- Lunch
8 am- Snack

Easy peasy lemon ice cubes....?
Such a simple concept.....a real AH-HA moment. I was surfing the wonderful world of Pinterest and came across Lemon Cubes. My primary drink is water(I hope your all consuming your 1 gallon(128 oz) of water daily)! I do love me some lemon water! We went shopping earlier this afternoon to get set for the 21 day fix starting tomorrow. Stay tuned for more on that!
While we were there I simply grabbed a container of lemon juice. Got out an ice cube tray, filled it up, popped it in the freezer, then enjoy! Ridiculously easy to jazz up that water! I've included a picture tutorial below. It's pretty cut and dry so I won't be explaining the steps again!
ENJOY! Don't forget to drink your gallon of water daily!! I GUARANTEE you'll feel BETTER! Small changes make a BIIIIIIIIIG difference!
